Birch Bakery is a boutique bakery making entirely from scratch, small batch, baked goods, custom cakes, and candies.  Our goal is to provide the best product possible sourcing the freshest ingredients, organic and local wherever possible.

Chef and Owner, Laura Springfield, graduated with honors from The French Pastry School in Chicago, where she was taught by Sebastien Canonne, M.O.F., and Jacquy Pfeiffer, both recipients of the French Legion of Honour Award.  Laura also holds a Bachelors Degree in Business from DePaul University.  After school Laura worked as the Head Decorator at Amy Beck Cake Design in Chicago and later moved to be Head Decorator and Manager at Marilyn’s Bakery.  Owning her own shop has always been a dream dating back to childhood summers spent at Birch Lake in Michigan learning to bake with her Grandma.  After taking a couple of years off to be home with her son, and moving to Seattle, Laura opened Birch Bakery in 2019.
